This amazing coffee comes from Grupo Terruño Nayarita (GTNAY), which is an enterprise that delivers consistently high-quality, socially and environmentally responsible, traceable coffee from Mexico.
GTNAY stockholders are independent democratic coffee producing societies scattered throughout the state of Nayarit. These societies range in size from 15 to a hundred producers. And while each society develops its own infrastructure and elects its own leaders, they are equal participants in the GTNAY structure, agreeing to not compete with each other and to implement proven best practices.
The coffee is processed at the Rustico wet mill, located in the town of El Cuarenteño, is owned and operated by the 25 members of the Altamirano family. The name Rustico is Spanish for rustic; this comes from the simple and basic nature of the mill. Using bare bones machinery and being a bit short on space, the innovative members utilise the very rooftops of their houses as coffee drying patios.
Most of the coffee that comes through Rustico is processed as “washed” coffee, a method that uses machines to remove the outer pulp and mucilage from cherries, before being placed on patios to dry. While this mill is as simple and basic as it gets, that is not to say that the coffee produced is lacking in complexity. Through their attention to detail and the care that goes into processing the beans, coffees processed at El Rustico are often among the top lots on our cupping table.
